Bread without kneading Recipe


  1. Disolve the yeast in the cold water.

  2. In a bowl, put the flour and then add the water and yeast, then the salt and mix well until combined.

  3. Cover the bowl with cling film and keep in the fridge for a minimum of 12 hours.

  4. After the 12 hours, the dough should have doubled the volume up. Then leave it out of the fridge for 1 hour to get room temperature.

  5. Get the oven tray lined with baking paper and dusted with flour. Also get ready the water to make it hot to create the steam in the oven.

  6. One hour after, dust the working table with flour and sit the dough on top. Then fold carefully the edges. Leave it to rest for 30 more mins with a cloth on.

  7. Preheat the oven to 230c with a small disposable aluminium tray in it.

  8. After the resting time, cut the dough into 2 equal pieces and pass it carefully onto the oven tray.

  9. Pour the boiling water into the disposable aluminium tray to create the steam and put your oven tray with the dough into the oven.
  10. Reduce the heat to 200c and bake for 40 mins.

  • 500 g strong white flour or wholemeal flour (more than 12g protein per 100g)
  • 400 g cold water
  • 6 g fresh yeast (or 3 g dry yeast)
  • 6g salt
