- Get the mise en place ready first: chop onions, grate the cheese, etc.
- Defrost the sweetcorn and squeeze it to remove excess of water.
- In a pot, sweat the onions with the margarine for 3 mins.
- Add the milk, cream and salt and bring to the boil. Reduce the heat to a simmering and carry on cooking for 10 mins.
- Out of the heat, add the cheese, eggs and sweetcorn. Mix well and give it a blitz with a hand blender.
- In a greased mould, pour the mix into it and flat the top.
- Cook in the preheated oven at 190c for 45 mins.
Note: I have served with some asado (kind of slow cooked beef) but chipá guasú can go well with many types of meat, specially bbq style.
