Chipá Guasú Recipe


  1. Get the mise en place ready first: chop onions, grate the cheese, etc.

  2. Defrost the sweetcorn and squeeze it to remove excess of water.

  3. In a pot, sweat the onions with the margarine for 3 mins.

  4. Add the milk, cream and salt and bring to the boil. Reduce the heat to a simmering and carry on cooking for 10 mins.

  5. Out of the heat, add the cheese, eggs and sweetcorn. Mix well and give it a blitz with a hand blender.

  6. In a greased mould, pour the mix into it and flat the top.

  7. Cook in the preheated oven at 190c for 45 mins.

Note: I have served with some asado (kind of slow cooked beef) but chipá guasú can go well with many types of meat, specially bbq style.

  • 3 finely chopped white onions
  • 1 kg frozen sweetcorn
  • 250 gr margarine
  • 250 gr extra mature cheddar grated
  • 100 gr whole milk
  • 100 gr whipping cream
  • 2 whole eggs (beaten)
  • 6 gr Salt
