Shortbread chocolate chip cookies Recipe
Method:
Mix the sugar and butter until well combined.
Add the flour and mix it to get like sand texture.
Add the chocolate chips and vanilla essence and mix it.
Compact a bit the dough using your hands and roll it into a cling film, like a ballotine.
Reserve in the fridge for 1 hour until solid.
Remove cling film and using a sharp knife, cut slices of 1.5cm each.
Bake in the preheated oven at 150c for 15 mins on a oven tray layered with baking paper.
Leave them to cool down for 1-2 mins, then pass them onto a clean tray.

100 g caster white sugar
60 g chocolate chips
Some drops vanilla essence
