Shortbread chocolate chip cookies Recipe

Method:

  1. Mix the sugar and butter until well combined.

  2. Add the flour and mix it to get like sand texture.

  3. Add the chocolate chips and vanilla essence and mix it.

  4. Compact a bit the dough using your hands and roll it into a cling film, like a ballotine.

  5. Reserve in the fridge for 1 hour until solid.

  6. Remove cling film and using a sharp knife, cut slices of 1.5cm each.

  7. Bake in the preheated oven at 150c for 15 mins on a oven tray layered with baking paper.

  8. Leave them to cool down for 1-2 mins, then pass them onto a clean tray.
