- In a casserole, cook the garlic in the oil until Golden color.
- Add the chopped tomatoes, bring to boil and then reduce heat to a simmer for 1 hour.
- Out of the heat, add the spices and Sambal Oeleck. Reserve.
- Peel the potatoes and cut in cubes of 2- 2.5 cm.
- Poach the potatoes in vegetable oil at 110 C for 10 mins or until they are soft.
- Make the fake alioli combining the mayo, oil, chopped garlic and salt.
- For serving, fry the potatoes in high heat until crispy. Reserve.
- In a hot pan, pour a ladle of the bravas sauce. Once hot add the fried potatoes and toss them to make the sauce coating the potatoes all over.
- Serve on a bowl the coated potatoes, top with a spoon of alioli and a sprinkle of fresh chopped parsley.
