Patatas Bravas Recipe


  1. In a casserole, cook the garlic in the oil until Golden color.

  2. Add the chopped tomatoes, bring to boil and then reduce heat to a simmer for 1 hour.

  3. Out of the heat, add the spices and Sambal Oeleck. Reserve.

  4. Peel the potatoes and cut in cubes of 2- 2.5 cm.

  5. Poach the potatoes in vegetable oil at 110 C for 10 mins or until they are soft.

  6. Make the fake alioli combining the mayo, oil, chopped garlic and salt.

  7. For serving, fry the potatoes in high heat until crispy. Reserve.

  8. In a hot pan, pour a ladle of the bravas sauce. Once hot add the fried potatoes and toss them to make the sauce coating the potatoes all over.

  9. Serve on a bowl the coated potatoes, top with a spoon of alioli and a sprinkle of fresh chopped parsley.

  • 5 Chopped Garlic Cloves
  • 120 ml Blended Olive Oil
  • 800 gms Tinned Chopped Tomatoes
  • 1 tspn Ground Black Pepper
  • 1 tspn Salt
  • 1 tspn Smoke Paprika
  • 15 tspn Sambal Oeleck
  • 4 Medium size potatoes
  • Veg Oil for frying

Fake Alioli:

  • 2 Chopped Garlic Cloves
  • 2 Spoons of Bought in Mayonnaise
  • A splash of Extra Virgin Olive Oil
  • A pinch of salt
